Ingredients
  

  • 2 pounds fresh spinach or 1 pound frozen, thawed and drained
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon all-purpose flour optional, for thickening
  • ¼ cup cream cheese optional, for added creaminess

Instructions
 

Prepare Spinach:

  • For fresh spinach: Wash, blanch in boiling water for 1–2 minutes, then transfer to an ice bath. Drain, squeeze out excess water, and chop.
  • For frozen spinach: Thaw and drain thoroughly.

Sauté Aromatics:

  • In a large skillet over medium heat, melt the butter and olive oil. Add chopped onion and cook until translucent (about 3–4 minutes). Add garlic and cook for 30 seconds.

Make Cream Sauce:

  • If using flour, sprinkle it in and stir for 1 minute. Gradually pour in heavy cream and milk, stirring continuously. Simmer for 3–4 minutes until slightly thickened.

Add Cheese and Seasoning:

  • Stir in Parmesan, cream cheese (if using), nutmeg, salt, and pepper. Simmer for 2 minutes, stirring to combine.

Add Spinach:

  • Stir chopped spinach into the sauce. Cook for 3–5 minutes until well combined and heated through.

Adjust Consistency and Serve:

  • Add a splash of milk or cream if too thick. Simmer longer if too thin. Taste and adjust seasoning, then serve hot.

Notes

  • Storage: Refrigerate leftovers in an airtight container for 3–4 days, or freeze for up to 3 months (texture may slightly change after freezing).
  • Reheating: Warm gently on the stovetop with a splash of milk. Microwave in 30-second bursts, or reheat in a 300°F oven for 15 minutes.
