  • 1 teaspoon paprika

  • 3 tablespoons olive oil For tossing the potatoes.
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried herbs (e.g., rosemary, thyme, or oregano)
  • 3 cloves garlic Minced or whole.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and cut the potatoes into even pieces to ensure even cooking.
  • Season the chicken with the seasoning mix.
  • Toss the potatoes in olive oil, salt, pepper, and herbs.

Cooking

  • Arrange the chicken skin-side up in a large, sturdy pan.
  • Distribute the seasoned potatoes evenly around the chicken.
  • Bake in the preheated oven for about 40-50 minutes or until chicken is cooked through (internal temperature should be 165°F (74°C)).
  • Check halfway through and stir if needed to ensure even cooking.

Notes

For variations, consider adding vegetables such as carrots, broccoli, or bell peppers during cooking. Serve with fresh herbs on top for added flavor.
