Preparation

  • Cut the steak into uniform bite-sized pieces (1-2 inches) and pat dry with paper towels.
  • Generously season the steak bites with salt, pepper, and optionally with paprika or red pepper.

Cooking

  • Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot.
  • Add a tablespoon of oil to the pan and add the steak bites in a single layer; sear for 2-3 minutes per side until caramelized.
  • Lower the heat to medium-low, add the butter, and let it melt. Then toss in the minced garlic and cook for another 30 seconds.
  • Coat the steak bites in the garlic butter sauce.
  • Remove from heat and let the steak bites rest for 5 minutes before serving.

Notes

Serve with sides like mashed potatoes, roasted vegetables, or a simple green salad. Avoid overcrowding the pan to ensure proper searing.
