Ingredients
  

For the Meatloaf

  • 2 pounds lean ground beef Helps reduce excess grease in the dish.
  • 1 cup breadcrumbs To bind the meatloaf.
  • 2 large eggs, beaten Help hold the meat mixture together.
  • 1 medium onion, finely chopped Adds flavor and moisture.
  • 2 cloves garlic, minced Extra flavor.
  • 1/2 cup ketchup For mixing and topping.
  • 2 tablespoons Worcestershire sauce Adds umami flavor.
  • 1/4 cup milk Keeps the meatloaf moist.
  • Salt and pepper, to taste For seasoning.
  • Optional seasonings (smoked paprika, oregano, thyme), to taste For additional flavor.

For the Potato Topping

  • 4 large russet potatoes, peeled and chopped Ideal for mashing.
  • 4 tablespoons unsalted butter For creamy mash.
  • 1/2 cup milk or heavy cream To create smooth mashed potatoes.
  • Salt, to taste For seasoning.
  • 1 cup shredded cheddar cheese (optional) For a cheesy topping.

Additional Toppings (Optional)

  • Gravy, for drizzle before serving Adds richness.
  • Chopped parsley, for garnish Adds color.

Instructions
 

Preparing the Meatloaf

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine all meatloaf ingredients: ground beef, breadcrumbs, eggs, onion, garlic, ketchup, Worcestershire sauce, milk, salt, and pepper.
  • Gently mix until just combined to avoid over-mixing.
  • Transfer the mixture into a greased 9x13 inch baking dish and press into an even layer.
  • Spread an extra layer of ketchup on top.
  • Bake for 40 minutes until cooked through, with an internal temperature of 160°F (71°C).

Preparing the Potato Topping

  • While the meatloaf is baking, boil the chopped potatoes until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Add butter, milk or cream, and salt, then mash until smooth.
  • If desired, stir in shredded cheese.

Assembling and Baking

  • Once the meatloaf is partially baked, remove it from the oven and spread the mashed potatoes evenly over the top.
  • Return to the oven and bake for an additional 15-20 minutes, until the potatoes are lightly browned.
  • Optionally, broil for 2-3 minutes for a crispy top.

Serving

  • Let the casserole cool for a few minutes before serving.

Notes

You can prepare this dish ahead of time by assembling it and refrigerating it before baking. Add extra time to bake if taken directly from the refrigerator.
